LE DUC IN CERAMIC
Bound with a ring of traditional bark skilfully cut from the local spruce trees during the summer months. Chalky and mild when young, it is best enjoyed close to its use by date when the rind starts to ripple and bulge, and the inside softens.
Wensleydale with Cranberries 150g
A traditional Christmas cheese, this small portion of Wensleydale is studded with dried cranberries. Creamy in texture with a sweet fruit flavour.
Coulommiers is identical to Brie with a difference in size being the only alteration to the recipe. Flavours tend to be richer than Brie - a moist mouth-feel with a rich buttery flavour finishing with slight citric notes on the palate.
Characterised initially by its white paste and the generous streaks of intense blue in its broad and numerous cavities.
